Ingredients:

1 (16 oz) loaf day old French bread

2 and ½ cup milk

1 cup half & half

4 eggs, lightly beaten

1 cup granulated sugar

1 Tablespoon vanilla

⅛ teaspoon salt

½ cup butter, softened

1 and ½ cup packed brown sugar

1 cup pecan, chopped

Directions:

Preheat oven to 350*.

Cube bread the place in a large bowl.

In another bowl, beat eggs, milk, half & half, sugar, salt, and vanilla to eggs; whisk. Pour over bread. Allow to sit 10 to 15 minutes

In another small bowl, combine with a fork, softened butter, brown sugar, and pecans. Mixture will have the consistency of wet sand.

Pour half of the bread mixture into a 8 x 8 inch pan.

Top with half the pecan mixture.

Spoon remaining bread mixture over and top with remaining pecan mixture. Press down into pan slightly. Pan will be really full.

Top with remaining pecan mixture.

Place pan on a cookie sheet with a edge to catch mixture that may boil over. Bake at 350* 45 to 55 minutes. Center will be slightly wiggly, but will set when cool. This recipe easily doubles for a 9 x 13 pan.

Zucchini Bars with Brown Butter Frosting is deliciously moist and absolutely heavenly. This is one of the best ways to use up those extra summer zucchini.

PREP TIME: 20 MINUTES

COOK TIME: 30 MINUTES

TOTAL TIME: 50 MINUTES

SERVINGS: 24 BARS

Ingredients

▢1 1/2 cups granulated sugar

▢1 cup vegetable oil

▢3 large eggs

▢2 cups all purpose flour

▢1 teaspoon baking powder

▢1/2 teaspoon salt

▢1 1/2 teaspoons ground cinnamon

▢2 cups shredded zucchini about 3 medium

▢1 1/2 cups pecans chopped

Brown Butter Frosting:

▢6 tablespoons butter

▢6 cups powdered sugar

▢1 teaspoon vanilla

▢8 to 10 tablespoons milk

Instructions

Preheat oven to 350 degrees and grease a 15x10x1 inch pan. In a medium mixing bowl, add flour, baking powder, salt, and cinnamon. Set aside.

In a mixer, add sugar, oil, and eggs and mix until smooth. Add the dry ingredients to the wet ingredients until incorporated.

Stir in zucchini and chopped pecans. Spread evenly in prepared pan. Cook for 30-40 minutes or until a toothpick inserted in the center comes clean. Let bars cool completely.

To make the Brown Butter Frosting

Heat a medium-sized saucepan to medium heat. Add butter and whisk until it turns brown. Add in powdered sugar, vanilla, and milk. Stir together until smooth. Spread over cooled bars.

INGREDIENTS:

1 Box yellow cake mix.

1 Can sliced pineapple, drain the juice, and reserve it for later.

12 maraschino cherries.

1 cup packed brown sugar.

1/2 cup canola oil.

1/3 cup melted butter.

3 larges eggs.

DIRECTIONS:

Step 1:

I preheated the oven to 350 degrees F.

Step 2:

I cut pineapple slices into small pieces.

Step 3:

I mix the cake mix with oil, reserved juices, and eggs, one at a time, and I beat after each addition with an electric mixer for 4 minutes.

Step 4:

In a separate bowl, I combined the melted butter with packed brown sugar, and I added 2 tablespoons of this mixture in each muffin cup, placed over the mixture pineapple pieces, maraschino cherries halves, and 3 tablespoons of the batter.

Step 5:

I baked the cupcakes for 22 to 28 minutes and removed them from the oven when they change the color to a golden brown.

Serve warm with coffee, it’s the best way for serving them for me. I hope you enjoy your weekend!

Old Fashioned Rice Pudding

 OLD FASHIONED RICE PUDDING!!

This pudding turns out in a lovely custard texture. A great balm for those seeking a return to some of the old-fashioned foods of their youth! I like it best because it is oven-baked and not made on the stove top.

Ingredients:

2/3 c. Minute Rice

2 3/4 c. milk

1/3 c. sugar

1 tbsp. butter

1/2 tsp. salt

1/2 tsp. vanilla

1/4 tsp. nutmeg

Cinnamon

1/2 c. raisins

How to make this recipe:

First step : Combine Minute Rice, milk & raisins, sugar, butter, salt, vanilla & nutmeg in a buttered 1 quart baking dish.

Second step : Bake in 350 degree oven for 1 h, stirring after 15 mins & again when pudding is done.

Third step : Sprinkle with cinnamon.

Finally step : Serve warm or chilled. Pudding thickens as it stands.

Ingredients

16 tablespoons butter cut into 8 pieces

2 cups semi-sweet chocolate chips

2 cups milk chocolate chips

4 1/2 cups sugar

1 (12-ounce) can evaporated milk

2 teaspoons vanilla extract

German Chocolate Icing

1 1/2 cups heavy whipping cream

1 1/2 cups sugar

5 egg yolks

6 tablespoons butter

2 cups sweetened angel hair coconut

1 cup toasted chopped pecans

Instructions

Place the 16 tablespoons of butter and chocolate chips in a large bowl.

In a medium saucepan, bring sugar and evaporated milk to a boil. Stir constantly for 10 minutes.

Pour sugar mixture over the butter and chocolate chips.

Use an electric mixer to beat the mixture for 3 minutes. Mix in vanilla extract.

Spread mixture evenly into a greased 9 X 13-inch pan. Refrigerate at least 1 hour before adding icing.

To make icing, stir together heavy cream, sugar, egg yolks, and butter in a medium saucepan. Cook over medium heat until mixture is thick enough to coat the back of a spoon, stirring frequently.

Add coconut and pecans and mix well. Let icing cool 15-20 minutes before pouring on fudge.

Servings: 48

Ingredients:

4 skinless, boneless chicken breast

1 envelope lipton onion soup mix (any onion soup mix will work)

1 8oz sour cream

1 can cream of chicken soup

Directions:

Place chicken in glass baking dish, after trimming all extra fat. Then in bowl add all other ingredients and mix, then pour over chicken. Bake at 350° covered with aluminium foil for 1 hr, then uncover and bake for 30 min.

Add bacon... chives... anything that sounds good!!!
